Working in Italy i meet people from many countries. They do rent a villa in Tuscany or they are looking buy property in Tuscany or in other region in Italy. Looking around and travelling with them we do talk also about other than just real estate themes. And many of them do ask for a good restaurant, shop and supermarket. The strange thing is, that there are in each country so many Italian restaurants and shops but the knowledge of Italian food is really decimated on pizza and spaghetti. There is so much more and without end, in each region different and no idea, which one is better. I can eat better than cook, so I will not try to present special food –just sometimes simple, easy and healthy food.
We have the service office in Massa, so I went yesterday in a small bakery to get the great wood-oven bread. Waiting there I saw a small box with hand written paper –from our garden. Aha? Zucchini. Smiling to me and saying – take me with you. Ok – here a short way how to make a simple and great zucchini frittata – a kind of Italian pancakes. Just as base – there are version without end.

Parsley and garlic in olive oil, put the trimmed zucchini in and let it slowly cook. You can use this quantity for 2 big or 4 smaller frittata. Do not overcook, I have mixed 4 eggs with parmesan and ca. 50% of the zucchini and put it in the pan. Cook it slowly and best thing is to close with a plate. Buon appetito!
